Golden Raisin Almond Cookies
Cookie Ingredients:
Cookie Icing Ingredients:
Mix the brown sugar, soft butter, and egg then add dry ingredients (flour, cinnamon, allspice, baking powder, baking soda, salt). Mix well, adding the hot coffee in small amounts while mixing.
Then add the raisins and the crushed walnuts. Mix.
Preheat oven to 350 degrees.
Place lumps of dough into a greased or non-stick 9 x 13 x 1 pan.
Bake for 20 minutes.
While cookies bake, mix icing ingredients. After mixing icing, place icing into a Ziploc or similar type bag. Cut one corner of the bag, leaving a small hole. Squeeze icing through hole and onto cookies when cookies have come out of the oven and are still hot.

Cookie Ingredients:
Using an electric mixer, beat the softened butter and shortening at medium speed until creamy; gradually adding sugars and then beat well. Now, add the eggs and vanilla and beat well again.
Next, combine the flour with the salt, baking soda and cinnamon to the butter mixture; beat well. Stir in the chopped walnuts and chocolate covered coffee beans. On an ungreased cookie sheet, drop heaping teaspoons full of the dough one inch apart.
To toast walnuts, place in a small non-stick pan with a pad of butter and slowly move around the pan on low heat until lightly browned. You should be able to smell the toasty walnuts. Be careful, they toast quickly and can easily be burned.
Bake in a preheated 350 degree oven for about 10 minutes or until appearing a golden brown color. Cool on wire cookie racks.

I ordered some dark roast a month ago and gave it a try at work on my little coffeemaker. The office smelled great and the taste was outstanding. I did give away a few cups because our office coffee is garbage but I am a bit greedy with my supplies when it comes to that kind of quality.

This is my day. Bweeeep! Bweeeeep! Bweeeeeep! Goes the alarm. The shrill sound is a cruel reminder that there is no early morning forest bird waking you today. Wap! Yes, that was your head hitting the cabinet doors since you're stumbling towards the grinder with your eyes closed. You finally reach it, you pour into the grinder the most delicious coffee beans ever tasted. You turn on the grinder and it makes short aromatic work of your favorite, the dark roast. Only the dark roast will do. Especially on cold, dark mornings. 4 agonizingly slow minutes later, the steaming, fragrant elixir is in your cup. A sip or two into it, the alarm is forgotten, the head is not throbbing, and you swear you can hear those birds! You silently promise yourself that the next time you travel to Kona, Hawaii; you're bringing an empty suitcase to fill with bags of this coffee! At the end of the cup, the world is just a bit brighter, maybe a bit warmer, and you decide sandals should be perfectly appropriate business attire for the day ;-) Thanks for the great coffee!
