Coffee Roast goes into the different phases of a coffee bean when roasted. Read all about it below...
Coffee Roast is the same as a coffee bake. It is accomplished with dry heat. Here is what happens:
When coffee beans are beginning to roast the water inside the beans starts to evaporate. Sugars begin to break down (pyrolysis) and beans expand. You can hear a loud cracking sound from the beans as this happens. The beans also turn yellow.
After a while, the popping subsides as the beans double in size. They become lighter by as much as fifteen percent.
Coffee beans take on a cinnamon looking appearance now and so this roast is called cinnamon roast.
As the beans continue to roast, they reach a dull, dark brown color. This roast is called City Roast.
You'll hear a second, softer crack than the first one because cell walls are breaking down. Small flecks of the coffee bean separate and oils appear as caramelization takes place. (Not all beans are oily at this point.) The coffee bean's color is now a darker warm-brown. This roast is called Full City Roast or Vienna Full City Roast.
This next roast is called Espresso. They are dark brown, some appear oily, some aren't. The beans are not fully shiny yet.
When the beans reach an almost black appearance, the roast is called French Roast or Italian Roast. The sugars are now charring, like a vegetable would over a flame.
Medium and Dark Roast are generally accepted terms for the most popular roasts. Regardless of your preference, you wouldn't want to over or under cook a bean because it just wouldn't taste right. This is why beans are roasted in rotating drums. It is to keep the beans roasting evenly.
After beans are roasted, the darker roast ends up larger than the medium roast. The dark roast beans puff up while the weight is equal for both.
To all you coffee lovers out there... I have been drinking coffee for over 43 years and have never had a better cup than this brand of Kona Coffee. I ordered some dark roast a month ago and gave it a try at work on my little coffeemaker. The office smelled great and the taste was outstanding. I did give away a few cups because our office coffee is garbage but I am a bit greedy with my supplies when it comes to that kind of quality.
I gave folks your site but I think other folks can get their own.

I absolutely love your coffee! I've never been a big coffee drinker until now. I can literally sit at my desk and drink cup after cup after cup. Not only does it give me a burst of energy, but it smells amazing and is very delicious. Definitely has a sweeter taste than any other coffee I have ever tasted. Usually, most coffee is sort of bitter. Not this coffee. The Kaluli coffee is wonderful! I love it.

This is my day. Bweeeep! Bweeeeep! Bweeeeeep! Goes the alarm. The shrill sound is a cruel reminder that there is no early morning forest bird waking you today. Wap! Yes, that was your head hitting the cabinet doors since you're stumbling towards the grinder with your eyes closed. You finally reach it, you pour into the grinder the most delicious coffee beans ever tasted. You turn on the grinder and it makes short aromatic work of your favorite, the dark roast. Only the dark roast will do. Especially on cold, dark mornings. 4 agonizingly slow minutes later, the steaming, fragrant elixir is in your cup. A sip or two into it, the alarm is forgotten, the head is not throbbing, and you swear you can hear those birds! You silently promise yourself that the next time you travel to Kona, Hawaii; you're bringing an empty suitcase to fill with bags of this coffee! At the end of the cup, the world is just a bit brighter, maybe a bit warmer, and you decide sandals should be perfectly appropriate business attire for the day ;-) Thanks for the great coffee!
